The Specialty Coffee industry has increased what coffee producers are capable of being paid — sometimes purchasing small amounts of boutique varieties for remarkably high prices. Still, there is a tremendous gap between the prices paid for these unique coffees and those paid for the vast majority of coffee from any given harvest.
